When you take a sharp turn the body of the car gets pulled downwards towards the outside of the turn while the wheels on the inside of the turn are pulled upwards by the suspension of the car. An anti-roll bar is a metal rod that is connected to the frame of the car ahead of the front wheels at both sides which then connects to the front suspension of a car.
Now, when the car takes a sharp turn the anti-roll bar on the outside of the turn pushes the body of the car upwards due to the compressed springs and the anti-roll bar on the inside of the turn will push the body of the car down onto the road due to the expanded springs. This negates body roll of a car by a huge margin and results in a flatter ride around corners. However, if you have too strong an anti-roll bar in comparison to the suspension of the car it will result in a hard and bumpy ride.
Race cars are fitted with bigger anti-roll bars as they come with stiffer suspension than road cars and need to have a flatter ride as they carry a lot of speed around corners.
